Flat Bread for Lunch
I love flatbread! Like pizza, you can have many variations, and flatbread is easy to make. I like to make it for lunch and pair it with a glass of red.
My version is simple, just add warm water, yeast, and sugar to stand for about ten minutes. Combine two cups of all-purpose flour, with a pinch of salt, then stir in the yeast mixture, add two tablespoonful of olive oil. Knead the dough. When dough is smooth, brush lightly with olive oil, place in a bowl, cover with a wet cloth in a warm place to let it rise - approximately 30 minutes until dough is double in size.
Roll out portions and shape them into flatbreads. Top with some pasta sauce, and your choice of ingredients. Grease baking trays (optional - sprinkle lightly some cornmeal), and bake flatbreads in preheated oven of about 475°F for about 18 minutes, or when browned and crispy.
